Blood orange (English: blood orange) is orange (Citrus sinensis) variants, in flesh and blood like juice with crimson color. This fruit is smaller than the extraordinary orange; epidermis usually have small pits, but can also be smooth.Make orange pigment is red, there are two types, one is a fat-soluble carotenoids, such as lycopene, β- carotene; a class of water-soluble anthocyanins.Blood Orange is a typical result of anthocyanin pigmented varieties. Red blood orange flesh is due to anthocyanin glycosides compounds formed by the combination of sugar, blood orange citrus varieties containing anthocyanins only class. Its formation depends on the pigment gene, maturity and fruit physiological factors, such as soil and climatic conditions, namely to reach a certain level of maturity, in order to form at low temperatures. Anthocyanins substances in the country tend to be in the form of development and utilization of natural pigments, and recent studies have found that it has a unique physiological activity, has antioxidant, anti-thrombotic, anti-radiation, anti-atherosclerosis, prevention of diabetes and other effects has developed some contain anthocyanins functional foods and cosmetics.
